6. Ham and Pea Salad

Peas, scallions, grilled ham, and a hard boiled egg with a dollop of miracle whip and some Italian salad dressing.

Served with a whole wheat English Muffin.

5. BLT Breakfast Salad on Toast

Pretty much all of my favorite things in one place.

Toasted wheat bread with a fried egg on top. Topped with a tomato, scallion, green pepper, and bacon salad (with homemade Italian dressing). Garnished with parmesan cheese.

4. Hot Sauce “infused” Breakfast

So I was making breakfast this morning and we were out of paprika.

I usually add it to my potatoes and onions so it’s more than just the regular old oil and garlic kind of thing.

I wanted to try something different, so I added a few good shakes of Frank’s Red Hot to the mix.

The hot sauce colored up the potatoes nicely and I was pleased. Since I had room in the pan, I decided to cook my egg in it as well, so everything would have a bit of a kick to it.

I let everything cook for an extra minute or two and plated it up.

Hit or Miss: I’m actually not sure on this one. I thought it was really cool, but I wanted more of the hot sauce flavor. It was subtle, and it kept growing, but since it got cooked in the sauce all I got was the heat. I wanted the distinct vinegar taste with my breakfast. So, it was good for spice; but just ordinary with flavor. I want to try it in my scrambled eggs next.

Woulda Been Better If: I wanted the hot sauce flavor and that just didn’t pull through when cooking with it. I’m going to have to experiment with this. 

3. Corn Salad

I started by chopping one tomato and several baby carrots.

Then I grilled some corn in butter and garlic to crisp it up.

When I was done with the corn, it looked like this.

I mixed all my veggies and decided that it needed something, so I topped it off with come crispy onion bits that we had left-over from green bean casserole.

I ended by mixing it all together with Italian dressing and putting it into individual serving bowls.

Hit or Miss: I’m giving this one a miss. While it tasted fine, it was just missing something and I spent the entire meal trying to figure out how I could make it better next time. I’m pretty sure my boyfriend would call it a miss just because I went on and on about the food while he wanted to just eat in peace.

Would Been Better If: I decided that it would have been better if it had more texture. The crispy onions didn’t give as much crunch as I had hoped they would. I originally wanted to have black beans in the salad, but we were out. The black beans probably would have pulled it all together. That or chickpeas…

2. Turkey Soup

Ingredients: Fresh garlic, a bit of butter, onion, carrots, celery, potatoes, left over turkey, tomato, parmesan cheese, water, and some chicken bullion.

What I Did: I diced the garlic and lightly browned it in the butter over medium heat in my soup pot. Then, I added chopped onion, carrots, potatoes and celery. After that cooked down for a bit, I added the left over turkey and about two and a half cups of water.

Next Step: I let all my ingredients cook together and had the water come to an almost boil and then I added my parmesan cheese (so that it wouldn’t clump too much because of the high heat…still did, but not as bad as I’m used to).

Then: I added my tomato and reduced it back to medium heat. I tasted the broth and it was very light, so I added just a smidge of chicken bullion and some salt and pepper to fill it out some.

Hit or Miss: A big hit. I was surprised at how much I liked it. My favorite part was the tomato. I waited for the right moment to add them and they weren’t all mushy and still had a great flavor (usually I mess this part up). I was also smart enough not to add noodles, so this was a very vegetable heavy soup and I liked that a lot.

Woulda Been Better If: If I made more. There wasn’t a ton of turkey left over so the soup I made was only enough for about 3 bowls (plus, my mom was mad I didn’t save any for her, haha). I’m a huge “guts” person when it comes to soup and I definitely would have liked more turkey in it as well. Also, I’ve got to remember my clumping issue and hold off on the parmesan until the end…it’s just so delicious!

1. Fried Egg Tortilla

The Ingredients: Home made guacamole (I know, I’m awesome, right?), hot sauce, 1 tomato, about 1/3 green pepper, a basil and sun dried tomato tortilla, 1 egg, and some margarine.

What I did: Turned the oven on 400F and put the tortilla in to warm and crisp up a little. Then, I chopped the green pepper and tomato (ended up only using half of it) into small pieces.

Next Step: I realized that if the tortilla got too crispy, it would be harder to eat because of its size, so I took it out of the oven and put a smooth coating up guacamole on it.

Then: I fried the egg and placed it in the center of the tortilla. Then I put the veggies on top of the egg and tortilla with a sprinkle of salt and pepper.  After that I decided it needed some cheese, even thought that wasn’t my original plan, and sprinkled some mozzarella on it. I dabbed some hot sauce on my creation and it was done.

Hit or Miss: Definitely a hit. I have an obsession with fried eggs so it would have to be really bad to be a miss.

Woulda Been Better If: The fried egg was definitely the center of this creation, and the tortilla was too big to accommodate for that. My first thought after taking a bite was, “this would have been better with chicken” and then I realized I hadn’t gotten any egg in that taste.  Plus, it’s winter and the tomato was kind of sad. Definitely would have been better if this was summer time and tomatoes were in season.
